Three Bean Chili

This one is easy, goes together and cooks quickly and is delicious.

Make it as mild or as spicy as you like by adding more or less chili powder and red pepper.

It’s hearty and warming plus the three varieties of beans add fiber and nutrition.

Top with the cheese of your choice, sliced green onions, chopped yellow, white or red onions

Serve with tortilla chips or corn bread.

INGREDIENTS

1lb ground beef

1 med. onion

1 green pepper

1 red pepper

2 cloves garlic, pressed

1 15 oz can tomatoes, whole, diced or crushed

1 15 oz can dark red kidney beans, drained

1 15 oz can black beans, drained

1 15oz can pinto beans, drained

1 15oz cans tomato sauce

1T chili powder

¼ to 1 tsp Red (Cayenne) Pepper – to taste

1/2 tsp dried basil

1t salt

1/2 t black pepper

DIRECTIONS

·      Brown ground beef with onion, peppers and garlic in a large pot. 

·      Add chili powder, red pepper,  basil, salt and pepper. Allow heat to release the flavors – 1 to 2 minutes

·      Stir in undrained tomatoes, beans, tomato sauce  

·      Bring to boil, then reduce heat to simmer. 

·      Cover and simmer 20-30 minutes until flavors are well blended.

 

Top With

Grated Monterey Jack, Colby Jack, Pepper Jack or Mild Cheddar cheese, sliced green onions, chopped white, yellow or red onions

Serve with :Corn Bread or Tortilla Chips
